Watermelon, feta and mint salad

Let’s start the sunny holiday-weekend off right with some delicious watermelon recipes! Starting with this refreshing, yummy and healthy salad.

During the summer, chilled and sliced watermelon is one of my favorite snacks. I love that you can transform this fruit to a nice lunch or starter with just two more ingredients. The citrus dressing brings out the flavor of the watermelon and the feta adds a touch of saltiness and creaminess to it. The mint adds a perfectly refreshing touch to it. Don’t miss out on this dish on your next garden party, I’m sure your guests will appreciate this salad on a hot summer day.

Ingredients

Servings: 2

For the salad

  • half a watermelon
  • 150g. feta cheese
  • bunch of mint leaves

For the dressing

  • juice of 1 lime
  • salt and pepper
  • 2 tbsp olive oil
  • 1 tsp honey

How to make the Watermelon, Feta and Mint Salad

1. Hollow out the watermelon and cut into bite-sized pieces. Drain the pieces briefly in a sieve.
2. Coarsely chop the feta and mint leaves.
3. Distribute the watermelon on the plates, topping each with feta and mint.
4. Mix lime juice, olive oil, honey, salt and pepper and pour it over the salad.
