Cinnamon Sugar-Top Cupcakes

It’s beginning to smell a lot like christmas! At least at our house.. And what other smell reminds you more of Christmas than cinnamon? I just love everything cinnamon, chai’s, buns, candles and of course, cupcakes! These cupakes are super fluffy and delicious and have just the right amount of cinnamon taste to them. So go and wrap your home in the scent of christmas and get in the holiday spirits.


Ingredients

For the dough

  • 240g. all purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp sea salt
  • 160ml buttermilk
  • 1 tsp vanilla extract
  • 70g. sugar
  • 2 eggs
  • 110g. butter, softened

For the Cinnamon Sugar Topping

  • 50g. sugar
  • 1 1/2 tsp ground cinnamon
  • 50. butter, melted

How to make Cinnamon Sugar Top Cupcakes

Preheat your oven to 180 degrees celsius an line a 12-cup cupcake pan with paper liners.

In a bowl, stir together the flour with the baking powder, baking soda, cinnamon, nutmeg and salt. In a smaller bowl, stir together the buttermilk and vanilla extract.

With a standmixer or with your kitchen maschine (I use my Kitchenaid), beat the butter and sugar until fluffy, for about 2 minutes. Add the eggs one at a time and beat until creamy and combined. Add half of your flour mixture, then the buttermilk mixture and the rest of the flour mixture and blend until combined after each addition.

Divide your batter among the paper liners and bake until toothpicks come out of the cupcakes dry and clean, for about 22 minutes. Cool the cupcakes before doing the tops.

For the topping, combine sugar and cinnamon in a small bowl. Brush your cupcakes with the melted butter and place cupcakes upside down into your sugar cinnamon mixture and cover them throughly. Happy baking and enjoy!
