Figgy Mushroom and Onion Grilled Cheese

I’m celebrating fall season with a new creation that I hope you guys will love. This year I’m super excited about fall and not too sad that summer is over (the first year ever that I feel this way) and I’m about to celebrate fall even more starting with this Fig, Mushroom and Onion Grilled Cheese. These ingredients sounded like such a good combo to me and it turned out pretty amazing.

It’s an autumn version of the classic Grilled Cheese with a caramelized and crispy onion-mushroom mixture in a sandwich that’s pan-sizzled in salty sage-butter. Sounds delicious right?

Servings: 2


  • 20g. of salted butter
  • 1 yellow onion, thinly sliced
  • fresh thyme leaves
  • fresh sage leaves
  • 200g. mushroom mixture
  • 4 slices of your favorite fresh bread
  • 2 fresh figs
  • 1 handful of shredded gruyere cheese
  • 1 handful of shredded cheddar cheese

How to make the Figgy Mushroom and Onion Grilled Cheese

Melt the salted butter in a large skillet over medium-high heat. Add the onions and cook until softened for about 3 minutes. Add the mushroom mixture, season with salt and pepper and continue cooking for another 5 minutes until the onions and mushrooms are caramelized. Add the thyme and sage and cook for another minute. Remove from the heat.

Brush the outside of each slice of bread with butter. On the inside of half of the slices of bread, layer the cheese, onion, mushrooms and figs. Add the top piece of bread.

Add some butter and 2 or 3 sage leaves in a hot pan and place the sandwiches in the skillet and cook until golden on each side, about 4 minutes per side. Enjoy while it’s hot!
