Avocado Toast with Poached Egg

Creamy, lemony avocado mash on brown-toasted fresh bread, doesn’t it just sound heavenly? This is one of my favorite breakfast dishes and it’s just so easy to make. Look no further because I’m about to share my easy, basic avocado toast recipe that you can switch up in many ways.

You can top your Avocado Toast with so many lovely ingredients like eggs (in any variation), smoked salmon, sliced radish, grilled mushrooms and so on.


Ingredients

  • 1 avocado
  • 2 slices of bread
  • handful of cherry tomatoes, halved
  • 1 tbsp of lemon juice
  • red pepper flakes, salt and pepper to taste
  • 1 egg

How to make Avocado Toast with Poached Egg

Bring a pan, half filled with water, to a boil (you just want bubbles on the bottom of the pan). Crack your egg into a bowl. Stir the water in the pan so it creates a whirlpool and place your egg in the middle of the whirl. That way the egg white swirles around the yolk and becomes compact. Cook for about 3 minutes.

Mash your avocado with a fork and put in lemon juice, red pepper flakes, salt and pepper and mix all together. Top the breadslices with avocado mash, cherry tomatoes and your poached egg.
