Persian Salad, also called Shirazi Salad, is a simple cucumber and tomato salad that’s loaded with herbs and dressed in lime juice and extra virgin olive oil.
This is a slightly different version, my own twist to it with a few additions that make the salad just a little more exiting and I think you’ll love it.
Ingredients
- 3 tomatoes, small diced
- 1 cucumber, small diced
- half of a red onion, chopped
- 1 green bell pepper, chopped into small pieces
- chopped fresh parsley and mint
- 1 avocado, small diced
- Salt and pepper
- sumac, optinal
- Juice of 2 limes
- 2 tbsp extra virgin olive oil
How to make the Persian Salad
In a large bowl, place the diced tomatoes, cucumbers, onions, avocado and bell peppers. Add mint and parsley and a pinch of salt and pepper. Finally, add lime juice and a good drizzle of extra virgin olive oil. Toss to combine.
