Cherry Clafoutis

Have you ever made a clafoutis or even heard of it? I haven’t until this week and if you’re new to it too, you’re in for a treat. It’s a sweet casserole-like dessert and so easy to make, especially if you have some cherries, berries or even nectarines or peaches on hand. Otherwise it’s made of ingredients that you probably have at home already.

The texture of a clafoutis is a little bit rubbery but that’s just how it’s ‘post to be.

Ingredients

  • 3 large eggs
  • 100 grams sugar
  • 85 grams butter, melted
  • 130 grams all-purpose flour
  • 30 grams of ground almonds
  • A pinch of salt
  • 230 ml milk
  • 500g cherries, pitted

How to make Cherry Clafoutis

Heat oven to 200 degrees celsius. Beat the sugar and eggs together. Gradually add butter, beating to incorporate. Add the flour, ground almond and salt all at once and mix until the batter comes together. Next pour in the milk a little at a time.

Place the cherries in a buttered baking dish. Pour the batter over the fruit. Bake 25 to 30 minutes, until slightly browned and almost completely set in the middle. Let sit for 15 minutes before serving in wedges.
