Looking for a no-fuss and last minute lunch idea? I bet you have all (or most) of the ingredients at home to make this refreshing tuscan panzanella salad. Even though it’s “just” a salad, it’s so filling because of the bread pieces and they’re oh so juicy and crispy and good! The bread will make all the difference here.
Ingredients
For the bread
- half of a fresh bread, use whatever bread you love the most
- 3 tbsp olive oil
- sea salt
For the salad
- 4 tomatoes, diced
- 1 cucumber, diced
- 1 bunch of scallions, cut in small pieces
For the salad dressing
- 3 tbsp olive oil
- 3 tbsp red wine vinegar
- 1/2-1 garlic, crushed
- some basil leaves
- 1 pinch of sea salt and pepper
How to make the Panzanella Salad
First start with heating up your oven to 180 degrees celsius. Toss the bread pieces in olive oil and salt and place them evenly on a baking sheet, bake for 10 minutes.
Once the bread is baked, mix together with all the salad ingredients. Make the salad dressing and pour over salad and bread mixture. Let the salad sit for 15 minutes so the dressing can infuse all the ingredients. Serve with some fresh basil leaves!
