Spicy Caesar Salad

I love a good Ceasar Salad but the deliciousness of a Caesar Salad really depends on the dressing you use. I like my Caesar Salad (or basically every other food I eat) to be spicy, that’s why I made a spicy Ceasar dressing infused with my go-to spicy lady Sriracha and I hope you’ll love it.

For the Salad

  • baby romaine lettuce, chopped
  • a handful of cherry tomatoes, halved
  • shaved parmigiano reggiano
  • salt, pepper

For the Breadcrumbs

  • 3 tbsp olive oil
  • 2 cloves of garlic, minced
  • thinly sliced fresh bread
  • salt, pepper, red pepper flakes

Toss olive oil, minced garlic, salt, pepper and red pepper flakes in a bowl with the pieces of bread. Put bread pieces on a parchment paper in the oven at 220 degrees celsius for about 10 minutes.

For the dressing

  • 100g mayonnaise
  • 2 cloves of garlic, minced
  • 50g. parmesan
  • 2 tbsp fresh lemon juice
  • 1-2 tbsp hot sauce, I use sriracha
  • 2 anchovie filets in oil
  • 1 tsp dijon mustard
  • salt & pepper to taste

Put all the dressing ingredients in a food processor and mix until the sauce is well combined.

Toss your salad with the dressing and sprinkle breadcrumbs on top.
