I had a lot of pasta and carbs in the last couple of days (not complaining!) but I was craving a healthy meal this weekend! Thankfully, Migros had some sea basses ready for me to bring home. I buy the sea bass and also dorades very often, they’re my faves to prepare at home.
It’s a light but at the same time very filling meal that will leave you feeling all good and healthy!
Servings: 2
For the fish
Ingredients
2 whole sea basses
1 lemon
2 cloves of garlic, minced
3 EL olive oil
Salt, pepper, fish seasoning
Herb mixture, I used Sommerkräuter by Oswald
For the Avocado-Tomato Salsa
1 avocado
1 lime
handful of cherry tomatoes
1 red onion
salt and pepper, to taste
How to make the fish
Preheat oven to 200 degrees celsius. Wash your fishes and dry them with household paper. Make some deep cuts on each side of the fishes. Prepare your marinade by mixing together the olive oil, garlic, salt, pepper, fish seasoning and a nice herb mixture.
Brush your fishes with the marinade. Cut the lemon in wheels and place inside of the fishes. Put in the oven for 20 minutes.
How to make the Avocado-Tomato Salsa
Chop avocado, tomatoes and red onion into quarters. Pour over the juice of 1 lime and season with salt and pepper. Mix it all together.
Once your fish gets out of the oven, it should have a nice golden brown crisp to it. Sprinkle with the Avocado-Tomato Salsa and enjoy!
